Studies on the Internal Browning of Apple Fruits Caused by Excessive Boron Application

Abstract

|
Boron application to ¢¥Fuji¢¥ trees increased both total and specific activity of PPO in fruits during storage. Also, a strong positive correlation between internal browning and polyphenol oxidase activity was found. Polyphenol oxidase activity was different between fruit portions; core tissues showed higher activity than flesh tissues. Five isozymes were detected by polyacrylamide gel electrophoresis. Although there was no difference in isozyme numbers, two isozymes became much stronger in fruits harvested from high level borax applied trees. Considering above results, it is concluded that excessive borax application to apple tree induced internal browning of ¢¥Fuji¢¥ fruit through increasing polyphenol oxidase activity.
